The only document required as proof of employment is your Reference Letter as per the CIC standard. Every other document is a bonus, so no you dont have to submit your NOAs, T4s, paystubs and the likes.

Eh - not exactly a bonus. The letter of reference is the single most important document, but some supporting documentation is strongly recommended. Without it, the VO could conclude that s/he was not convinced that you performed the duties...
IRCC cannot REQUIRE you to provide the NOA or T4 because of privacy legislation, so technically it is voluntary. But strongly recommended.
