I am going to put both me and my wives profile in Express Entry. Following are our profiles from India:

Me: B.E. (Electronics) + 3 Years Workex as software engineer + MBA (International Business) + 3 Years Workex as Financial Analyst in Operations Finance (Currently working)
Wife: PhD (Chemistry - Nanomaterials) + 1 Year work ex as Assistant Professor (Chemistry) in an Engineering Institute

What NOC codes shall we use when:
a) I want to apply for Not just Finance roles but overall jobs in Management in Canada (FinTech Program Managers, Product Managers, Supply Chain, Operations etc)
b) My wife wants to apply both as Assistant Professor and R&D roles ( Post Doctoral Fellow or Research Associate) in in Canada post PR. What NOC code must she use?

Is it that the NOC code that I use I have to get job in the same code in Canada?

NOC code depends on your job experience in India and not on what you plan to do in Canada. Once you get pr you can choose to work in whatever field you like, it has nothing to do with NOC. Match your NOC to the roles and responsibilities from to the job you're declaring in the express entry profile.

you need a NOC for each job you had. It has nothing to do with what you going to do in Canada, its only to prove what you did in India. when you choose NOC make sure you go through the roles mentioned in it, and choose the one closely match your job in India. For each one you have to submit an experience letter as per CIC requirement.
