My current job meets NOC code for manufacturing manager - 0911 however it does not meet employment requirements (i.e 5-10 years as supervisor) I have experience of 3 years now as assistant production manager in manufacturing. I believe this will not affect my PR application. Please correct if i am wrong.
However will this make it difficult finding a job through job bank or when i go to Canada?

As long as you have the experience, you have a chance. Career trajectories aren't the same for everyone and I'm sure Canadian employers know this, so it would be absurd to penalize someone with actual experience in the field and role, just because they don't have the 'recommended preliminary requirement' of 5-10 years as a supervisor.
That being said, those of us without any CANADIAN work experience can expect to face some difficulties at first in trying to find employment in Canada - but it's all part of the game of taking this risk and trying to start this new chapter in our lives. Hopefully with proper planning, perseverance, and a little fortune, it will all turn out alright for us in the end.
With regard to your PR application, you are correct. The employment requirements are not considered in determining if your work experience is legitimate (unless it's a really important requirement, like medical training and a license, if you're claiming to be a doctor). The only thing that really matters is that your job duties and responsibilities match the NOC Code's.
Please note, though, that it is highly unlikely you will find a job through job bank. As far as I know, no one ever does, and that's probably why they made the 'job bank' requirement optional recently in the Express Entry process. In fact, it's highly unlikely you will find a job before actually physically getting to Canada, unless you currently work with an international firm with Canadian offices, and they are willing to transfer you, or you have some amazing professional networking connections in Canada already who are willing to go out of their way to help you.
