I have applied for my partner through common-law.

He has a 2 year work visa which expires Oct 14th on International Experience Canada.

We applied for the open work permit with his sponsorship documents and they have been received and we have a temporary number for them. Will this automatically be updated on his work visa or do we need to do something else?

I'm not sure what you mean by automatically updated. At some point he will be issued the open work permit. If his IEC expires before the OWP is approved, he will have implied status and can keep working until a decision is made in the OWP.

Do we have to get him a new SIN since it expires in october? how do we go about that stuff?
