Hi vermas, welcome to the forum and congratulations for your engagement. Its great to see people started to think about visa process that early, I think proactive preparation always pays off. I wish you gud luck with your India trip and visa process. With regards to some guidance, I am no expert but I would share what I have learnt so far with this process.
1 - There are several great posts explaining the visa process. I will try to dig them out and send you a message with those posts.
2 - The visa documents package pretty much describes everything you need, which is available on CIC's website.
3 - With regards to precautions: (1) make sure you keep close contact with your fiancé (e.g. whatsapp, phone calls, emails etc). (2) You will need to submit them as proof of relationship. (3) Ask your fiancé to apply for police clearance about 2 months before your wedding. My wife's took about 2 months to come. (4) Ask her to get medical check complete prior to your wedding or get it done after wedding while you are there. (5) Apply for your proof of employment when you leave for wedding, it will arrive by the time you get back to Canada. All these little things will help you save time when you come back to Canada and apply asap.
4 - Yes, whole application package goes to CIC-Mississauga. They then forward to NDVO upon sponsorship approval.
5 - That's great she has visitor visa. She can even come back to Canada with you at the same time you come back. But make sure her "purpose" of visiting Canada remains a "tourist" as that would be the visa she has. If you are asked by the immigration officer what is she here to do, you must tell him/her travel plans for her, have some hotel bookings, and try that she doesn't stay for longer than 1-2 months, as it may cause her problems entering next time on a visitor visa.
6 - You can hire a consultant if you want to. Many people recommend it, but its entirely your personal choice. If you feel very confident with your application, you can file on your own.
