I was checking out the new Citizenship application portal. I made over 10 visits to Canada before deciding to move here.

how to handle this is confusing on the new portal - whereas it was simple on the Online Presence Calculator

1. Would I just add a new Temporary Status as Visitor for each of my trips and have it expire the day the trip ended?

2. Would I also have to record absences from Canada between Visitor trips even though I was not actually residing in Canada during that time?

Yep, you need to list that under visitor status, although you may want to make sure that you have enough days to qualify for citizenship without having to rely on these 10 days, as IRCC may complain that they can't document your status in the country during those visits.
And yes, every absence from Canada must be listed during the 5 years period. You can list "home country, not a resident of Canada yet" or something similar as a reason for "travel".

Sorry, I meant 10 visits not days.
But the point stands, there's a high chance your application goes smoother with at least 63 days of buffer :)
