Monthly Pay Stub is better to prove One Year Experience?

Hi guys, here is my timeline for one year experience.

03/June/2019 - 20/March/2020
:Working full time, paid hourly. monthly pay stub. I took 3 week paid vacation, 2 week unpaid vacation, and after resigning received accumulated, unused vacation pay of 1 week.

~~ 1 week gap~~~

29/March/2020 ~ present: Working full-time.

To summarize, I took 2 weeks of paid vacation and there is 1 week of gap between my previous job and current job.
If I don't consider those 3 weeks, my one year experience will be fulfilled next month on 03/June/ 2020.
I've met my 1560 hours requirements months ago.

Here are my questions.

1. Since I've worked my 1560 hours (calculating max 30 hrs a week) and on monthly pay stub it only specifies how many hours I've worked in a month, is there a way that IRCC knows I've went on a unpaid vacation? The months where I went on unpaid vacation, on my pay stub it still says that I've worked more than 120 hours/month. And my experience letter does not mention the vacation I took.

2. Is it safe for me to apply on June 3rd?

as long as you are employed and under the company payroll it should be ok.

I was employed full time yes! If I do apply on June 3rd, should I submit my document after the end of June to be safe or it doesn't matter?
