I was under the impression that the whole process was 14 months (start to finish), but since it's now saying "In Process," then I'm wondering if I should start counting from that day....

"Processing Time" according to CIC's explaination =>
Processing times are calculated from the date that an application is received until the date that the application is finalized ... Plz refer to FAQ under Q3 here: http://www.cic.gc.ca/english/information/times/faq.asp#Q9 ... which means when you receive AOR, whatever day showing on the E-case is the 1st day of 14 months journey.
"In Process" on the other hand corresponds to mentioned above =>
Application Received by Citizenship and Immigration Canada (CIC) We have received your application and will review it in order of receipt. We will send you an acknowledgement letter (AOR) ...
