Yes, she can 'move' back to Canada with you. Provide the Canadian address for her visa and she will have to flagpole (cross to the US and back) to land.

So when I move I should use my Canadian address for the visa and it will be ok? Also, once the visa is given all we will have to do is drive to the US and drive back to land? She won't need to go back to Japan and then come from there?

I'm looking at September 10th for the both of us to move (technically visit for her) and just want to make sure everything is ok. What documents will she need for her visit trip?

Yes and yes for the first questions.. you will have to ask others how they worded the 'visit' to immigration at the border upon entry. Only risk is if you thought there would be an interview she would have to fly back, but those are rare.

As far as documents, bring any communication with CIC like emails to prove you have an application in process.
