Link is to the letters that came with the PR travel document. I'm not sure on all the legal wording but can somebody provide a simplified version.

She been living overseas to take care of her father who also passed away recently and she know she have not meet her obligation days to renewed her expired PR Card.

Would she have to complete the Notice of Appeal? Or just stay long enough to meet her obligation days before sending her application to renew her PR card.

She accompanied our son oversea to live with grandma for about 8 months. Would she be credited for the 8 months while accompany him oversea when she applies to renew her PR card as he was born in Canada.

Not include the days accompany our son she would be about 100 days off from the 730 days obligation.

If she doesn't appeal, PR status IS lost. There is NO option now to recover PR status by just staying in Canada and/or applying for a PR card.
Accompanying a citizen child is not an exemption.
The only hope is to make an H&C case. I strongly recommend obtaining professional legal assistance.
