Might be a stupid question but the letter of employment for sponsor has to be orginal is that just typed on company paper with date, salary and signed by your manager with contact details?

Yep. Company letterhead, signed by hand - not a photocopy

I was transitioning jobs when we applied. I supplied 3 sequential pay statements from my previous employer (and the T4 for the year previous), and the executed offer letter form the new organization. That was enough (probably overkill, since there is no income assessment). Remember, you only have to show a source of income, to prove you're not in receipt of social assistance. And all were copies.
