Letter of Employment?? my checklist question

So the following is my checklist - EE for FSW
I am confused as to what Letter of Employment is?

I do not work in canada any more - (on restoration)
I have said yes to Offer of Job, from 1 employer with no LMIA - so that is perhaps why I am being asked for the Offer of employment.
Also I said i am currently living in Canada

QUESTIONS
1. What is letter of employment?

2. My employer has applied for LMIA and hasnt heard back yet. I do not want to use the points (600), and fairly so my points are 511, so it clearly shows on my ITA Arrange employment 0. Is it alright for me to clarify that I am only presenting my situation as is and here is proof of LMIA applied and thsi is not for extra point in letter of explanation??

3. I am assuming WES is to be attached with educational diplomas, but what about IELTs??

4. ARe there any other documents that should be showing up?? Birth Certificate??

The offer of employment, on company letterhead, is basically the offer you get when the employer decides they want you -- position, salary, if the job is permanent, benefits, etc. In big companies, it goes back to HR. The letter of employment is from someone who is currently employing you. Again on letterhead, it says basically the same things. When you filled out your EE and wrote that you had a job offer, did you say you were currently in that job -- without LMIA? That would be why you have the requirement for a letter of employment.

If you have left that job temporarily to wait for the LMIA, and are now not working, on your PR application indicate that the job had an ending date and that you are now unemployed. As you change things on your PR application, the documents required will change along with it. For instance, I had not mentioned one of my jobs on my EE that I remembered as I filled out my PR application. When I listed it on the PR application, a place for an extra employment document opened up.

Actually no, when I was offered the ITA, I had already said an end date for the Employer i was last working for (march 2015), so I really do not understand why they are asking for the Letter of Employment. So strange.

And I just cant remember if the pre-ITA questionaire had a separate section for valid job offer
if it was in Intended work in canada or something - im not sure. Damn someone should upload screenshots of all questions asked.

The EE questionnaire asks first if you have a job offer in Canada. Then it asks if it is supported by LMIA, if you are currently working in Canada, if you have a work permit for the job, if the company name is on your work permit, and what the NOC on your work permit is.

You can look at that EE questionnaire online - you just can't change it. If you said yes, you were currently working there or on your PR application that's the reason. If you can't adjust your answers to get rid of the letter of employment, and if you aren't back in the job with an LMIA before you have to turn in your application, the best you can probably do is add a letter of explanation.
