I am being sponsored by my partner, and we are sending the application soon. It says on the guide she needs a "original letter from your current employer". I was reading elsewhere on the site that it needs to have a letterhead, and if it does not, it needs notarized, is this true? Is just plain white paper, with the information needed and a signature from her manager OK?

On the Checklist it says the letter must have period of employment, regular hours per week, and salary.

Follow the checklist. It’s fine the way you described. Letterhead would be a bonus but not required.
 
If the checklist doesn't specify it you don't need to worry yourself about it.

I didn't get ours on letterhead and most certainly not notarised.

Hi there, i only get one letter from my co-worker/friend and employment letter from my workplace without notarizing.
