I live in US and having a trip coming up to UK. I am thinking is there a chance to do landing during my transit through Toronto? Has anyone landed during their transit? I will book my onward flight after 8-12 hours.
As far as I know there would be no issues because you will be entering the Canadian soil from outside. You need to provide them with a Canadian address so they can send your PR card to that address. Just make sure you have all the necessary documents with you.

You can get the landing done no issues but i am not sure about leaving Canada and then re-entering.. I have seen many applicants being told to not leave Canada as they do not have PR card yet and it would be difficult to re-enter Canada..
Actually mesumrizvi is right, I forgot about that part! Entering Canada after you leave without PR card is challenging. You might want to take that into consideration.
Unless the OP is from a visa exempt country, then he can indeed land during transit, leave Canada, and then enter as a visitor on his visa exempt passport.
Landing - based your comments I see I will not have any issues
Address - Yes I will provide a local address for them to send the PR cards
Re-entering - I do not have immediate plans to re-enter, I will book a multi-city so that I dont fly via Toronto on my way back. I am also aware that I can re-enter using COPR via road.
