Interesting insight! I'm just going to list out my inferences from your post (no clue whether they're accurate or not).
This means that criminality checks begin in Sydney (which is why they're independent of a test invite), and since you passed it, you won't have a FP request. I wonder whether FP requests are linked to prohibition also or not (My guess is no)
They seem to send your application soon after they change it to IP, takes 2-3 weeks to be received by Kitchener.
Knowledge requirements would be met by test and interview, residence requirements would be confirmed by requesting a report from CBSA and then reconfirmed by going through passport stamps during your interview
