You are required to submit work reference letters from previous and current employer for all the work experience that gets you points for program eligibility and/or CRS.
If you want to prove that you deserve those points that you got for the work experience, it isn't enough that you simply prove that you worked with an organization. You have to conclusively prove that you worked in a particular NOC.
