It's fake. That email address is fake. The hotel email is fake.

How much are they telling you to pay for the visa processing?

Yes, another "hotel" scam. Almost all of these hotel related job offers are fake.

The real hotel site is http://www.chelseatoronto.com/en/

So as said above a fake job offer

How exactly have you "cross verified"? A genuine job offer will not ask you to pay them visa fees.
