Guys, I'm very close to potentially landing a job offer in Canada, even though I haven't stepped foot into Canada yet. The recruiter is aware that my PR application is 6 months into processing. If I receive this offer and submit the information to IRCC, would this possibly expedite the process? Or just slow it down ?

Whether or not you can land a job now is completely irrelevant to an application you already submitted.
I guess my question is - If I land this job offer, what's the fastest road to Canada? To pursue this PR or look into a Canada work permit or something (I'm not familiar with this) ?

Have you ordered your GCMS notes to see what stage your application is at? It's hard to say which would be faster since your PR application is 6 months into processing already.

Have you ordered your GCMS notes to see what stage your application is at? It's hard to say which would be faster since your PR application is 6 months into processing already.
Yes I've ordered them but not yet received. Honestly, there's an issue with my eligibility in regards to a reference letter not accurately fitting into the specified NOC code. I've submitted a CSE with updated information to correct this and I'm hoping they reconsider my case. At this point, I'm wondering if there's a faster route if I land this offer and this PR application is in trouble, then maybe withdrawing and pursuing another route would be more sensible..

I'm not sure about your offer details. But if you have LMIA, getting a work permit is the fastest way.

EE under processing for more than 6 month is not very common but could happen if you got randomly selected for extra security screening. If you confirm this in your GCMS notes. In that case, IMHO, you'd better get a LMIA with the job offer, that would be much faster.

You can pursue them parallelly.
