i am writing this on behalf of a friend.

Having received an ITA, she is working on her documents currently. however, unfortunately she faced a layoff.
she has over 6 years work experience. the current one being her latest and she was under probation too.

my question is:

should she update the cic profile?
will the employment letter be enough as proof. (it includes all the requisites by cic)

If your friend is yet to submit e-apr post ITA then it is wise to make changes according to current situation in application while submitting by changing dates. As long she still meets eligibility based on experience, it should not affect the PR application. It is not a must to have a job while applying for PR.
 
Let's say with a job, my CRS score is 460 and I get an ITA. Then a few weeks after applying and paying all the fees, I lose my job, and my CRS falls below the minimum threshold of ~440. What happens now?! Does my application get rejected? Do I get refunded at all?!

How would it fall that much because of a job end? I dont understand that scenario
 
You did not lie before ITA and its points calculation. Similarly, you should not lie for the next step in the process. As others have suggested, make the changes in your dates. It is impossible for loss of 20 points. The points are calculated as on time of your application, there should be no fraud in that application. If you lost your job or got divorced or had a baby, these are all post point calculation. You lost a job , after your application, does not erase your points for your past experience before your application.
 
To be precise, I get 50 points for LMIA-approved job... So if my current CRS is 460, w/o that job offer, it falls down to 410. FSW.
