I have 1 year work experience at Walmart for Department Manager position. But they are just providing me with the letter of employment which states my job title, wage , Biweekly Hours and hire date . Can I apply for Express entry with this employment letter and pay stubs? Or
What other documents do I need to prove my work experience?

Your duties are mandatory so ircc can confirm your NOC. Try to get the same above from your direct supervisor on a headed letter paper including your duties. Otherwise in PDF forms prepare ( 1 and 2 in one pdf) :
1 the above letter
2 your job description
3 LOE with a proof why you couldn't provide those in one reference letter (maybe a reply Email that they do not provide such reference letters take a screen shot and attach it).

I am about to complete my 1 year work experience for Canadian Experience class. Can I create my express entry profile now or Should I wait till I complete my 1 year?
