1. Do we need to submit fresh work experience document? Or can i use the one i submitted during PNP application?
You can submit the same as long as they meet the requirements of IRCC.
2. Can we submit the PCC document later? I have my deadline at 18th Feb. if not able to get the PCC ..can i submit it without it and then later upload it once i get it?
In most cases, they do not allow PCC to be submitted later on. In few exceptional cases, where it takes too long to receive the PCC, they may allow. But it really depends on the country for which the PCC is required.

On going through the posts in the forum, I noted that people usually get a status bar in their profile once application is submitted. However, I am unable to see the status bar in my CIC profile. Can someone please explain why is it missing ?

hi, I doubt AOR means R10 completeness. As far as I know, it's initial step that can take up 30 or more days to complete. R10 step is crucial for BOWP. Can you post the link that states aor letter means R10 check?so, if i read well, if we got the aor letter it means that the R10 check is completed!
i recieved it right ahead after paying fees. i think that compleness check is done automatically
