ITA Documents preparation in advance

In order to win time, what type of documents can we prepare in advance? As in the date wouldn't impact the document's acceptance:
- Old employment reference letters
- PCC in current country of residence

(can't think of anything else but if anyone with experience document hunting can suggest something)

Can we start asking for these before we get the ITA? Our current score stands at around 470 so there's a high probability we might get a chance in one of the next few draws (I've been told there's a sort of backlog so even if we have more than the cutoff score we can still not get an ITA if we just submitted, not sure if it's true)

You could also be trying to secure a letter from your bank, for proof of funds, and you can be scanning the relevant pages of your passports, marriage certificate, etc. You can consult the list for guidance: http://www.cic.gc.ca/english/resources/tools/perm/express/intake-complete.asp

Obviously no one knows what will happen in each draw, but with a score of 470 you have a great chance. Letters dated a few weeks previous to your ITA will be fine, if you also need to get current job letters.

If your points are higher than the points cut off for the draw you will get an ITA. People may be speculating there is a backlog post-eAPR, because of the high numbers of ITAs recently, but personally I've not seen evidence of this.
