I am applying for Canadian Citizenship certificates for my twin 13 year old girls who were born in the USA to a Canadian father and American mother. I have the following questions:

(1) Will they retain their USA citizenship once they're granted their Canadian citizenship certificates?

(2) Can I send their original USA birth certificate and my original Canadian birth certificate instead of certified copies?

(3) For their identity documents, I plan to send copies of their USA passport and their Social Security cards. Will that be sufficient identification documentation?:)

Both Canada and USA recognizes dual citizenship, so yes they can have 2 citizenships and passports

(1) Yes.
(2) You could, but they do not remit any documents (even originals) sent to them back to you; that is why they ask for certified copies. If you do not want to use a notary public and are close to a Canadian consulate, they can certify copies for you; just make an appointment with the consulate first.
(3) Yes.
