Nope, don't notarize your SOP, Resume. Just the educational documents, work experience certificate, IELTS scoresheet and your passport.
You always notarize those documents whose original copies will stay with you.

Notary is different bro! You just have to get it attested by the right authority. It is only needed for your education documents that is only your Transcripts should be in a sealed envelope signed across at the opening flap by the examination authority of your university. Your LOR should be signed and sealed across the flap by your recommender.

The Experience letters are not required. You don't have to send any work exp. letters unless asked so. Work exp letters are needed only for visa. The best way to prove your employment, is by providing a LOR from your current employer on a official letter head that is a better way to prove your employment. Employment/relieving letter need not be provided unless asked for. Send only the documents listed on the university website don't send additional things.

Hello,

Some of the Universities in Canada do not consider notarized copy as official documents. According to them " An official document bears an original university seal or stamp. It must be received in an envelope which has been sealed and endorsed by the issuing institution. Unless the documents are only available in English, we require the official original language document accompanied by literal English translations which have been certified by the institution which issued the degree. Notarized documents are not considered official for final admission purposes."

I hope this helps.

Thanks
