Hi,
I submitted the inland application in mid Oct and received the AOR on 4 Dec. I arrived Canada on 3 Aug 2019 so I am supposed to leave on 2 Feb 2020. Should I extend my stay as visitor now while waiting for the OWP? Thank you!

You're covered under implied status starting on 3 Feb through whenever you recieve a response about your work permit. There still is a small chance your OWP application gets returned (the AOR is just for the PR application, they send the OWP off to Edmonton or something), so if you really want to apply to extend your stay, there's no harm in doing that beyond it costing you $100, but you likely won't need to.

If you haven't received the OWP by the end of January, you could apply to extend your status as a visitor, just in case the OWP app is returned (not likely by that point but still possible). Once you have the OWP, you can withdraw the visitor extension app.
