I'm familiar with this change from CIC note:
As of May 30, 2015, all valid Canadian work experience will be recognized under the Comprehensive Ranking System (CRS) of Express Entry as CIC is removing the requirement that Canadian work experience be continuous.
Which province are you applying to? If you are applying to OINP, you have to list all your employments regardless of NOC in the personal history section for the last 10 years or since 18 as they do not allow any gap.
In my EE profile (both Pre- and post-ITA), I just had my NOC B job in the work history section. I included all my employments including the NOC C jobs in the personal history section post ITA. Employment records for the NOC C jobs was not on my EE document checklist but I still provided the reference letters as additional documents in case CIC requires them.
