I was/am a student and I have visited my spouse in Canada for 2 months while I was still in school. I am wondering if I should include this vacation on personal history or not.

You could put your employement as unemployed or student,

You can put your occupation as unemployed or student, and yes you can note your university studies were ongoing, im sure the officer would understand that

If you are talking about visiting like during summer break between semesters, I do not think it is necessary to state that you were not working during that time. You were a student and they know and understand that schools take breaks.

"Ongoing" is for when you are doing it still as in at the time of filling out the application.
