If I wanted to stay in canada as a visitor for a year, would I need to apply for a visitor visa or just the eTA or both?

You apply for an ETA. How long you are allowed into Canada will be determined by the CBSA officer you speak to at the border. Assuming you are given the default visit of six months, you would then apply to extend your visit to Canada once you are close to the six month mark.

No separate document.

If your passport is simply stamped - you have six months.

If your passport is stamped and a date written in - then you can stay until the date specified.
