What is the difference between the IELTS Academic and General? Which one is easier and how much easier?

They're the same in Listening and Speaking but not in Reading and Writing. Generally speaking, the general training is easier than the academic one, as the latter is for pursuing under and sometimes post graduate careers.

As a result, Citizenship and Immigration Canada Officers are authorized to substitute for the criteria listed above their evaluation for the likelihood of the applicant becoming economically established in Canada, and to accept or refuse the applicant no matter what points are awarded.

Substituted evaluation is not the same as Humanitarian and Compassionate grounds. The Minister of Citizenship and Immigration, in compelling circumstances, may grant a Canada Immigration Visa to anyone who is otherwise inadmissible.
 
If you intend to study or do post studies, you have to take acad but in general especially for immigrants, you need to take GT

Does this mean the the Listening and Speaking is graded different from Academic and General Training? What I mean is that, are they more lenient on the GT?

There is 4 Section in IELTS (Listening ,Speaking,Reading and Writing)

# Listening and the Speaking sections are the same for both Academic and General format. but the difference between IELTS Academic and General modules is in Reading and Writing Part.......

IELTS Reading :

Academic – Read 3 longer and complex passages. One per section
General - 4 or 5 Short passage and 1 long passage.

IELTS Writing

IELTS General Writing

Task 1 – Write a letter requesting information or explaining a situation.
Task 2 – Write an essay in response to a point of view, argument or problem.

IELTS Academic Writing

Task 1 – Describe a graph or chart or diagram.
Task 2 – write an essay in response to a point of view, argument or problem..

I assume you are thinking of immigrating, hence you have to take the General Module. ;D
