IEC Young Professionals application- job offer letter

Hi
I am already working in Canada on IEC Working Holidays wp. I have applied for PR too.
To be on the safe side, I am thinking to apply for IEC Young Professionals category to get one more year wp, in case my pr takes longer to be ready.
I am a German citizen and am allowed to get IEC twice, if in two different categories.

I have two questions.

1) I am going to use job offer letter from my current employer to apply as the offer letter to apply for IEC Young Professional. Is this ok?
If so can I use the offer letter that my current employer already gave me in December (few months back) or I have to get a new offer letter with new date on it?


2) Last year I applied for IEC Working Holidays Germany around end of September/beginning of October. There it shows number of available spots and issued invitations and the current chance of receiving an invitation to apply based on all those numbers.

Last year from September to December the chance for Germany IEC Working Holiday was "Excellent". Today I checked the same category and the chance is "low". Does anyone know if the chance usually goes down during the first few months of the year because mostly people apply at the beginning of the one year period and it may go high again? or this year is just different than last year??

For this year the quota is 4200, they have already issued 4350 invitations and 1379 spots are still available (because some people receive the invitation but don't submit application -they change their mind or something). and currently 15 people are in the pool.

or is it better to ask my employer to put a new date on the offer letter and then use it for IEC application?
I feel it would seem weird to my employer to give an offer letter to someone who is already working for them! Did anyone have such an experience?

Good afternoon! I am just new here.i hope i can find answers for all the questions i have right now because i am so confused about my situation.
1. I came to canada february2019 and worked as a live in caregiver for 11months only because my employer died.

2.my work permit expires february 2021.

3.i was laid off from work january 2020 because my employer died.
4.now i found a new employer who wants to sponsor and hire me.

question is: how do we start the process? Does my new employer needs to apply for LMIA before i apply for a new work permit? Or can i transfer my current work permit to my new employer?
