On my check list it says to provide prof that I will be living in Canada when my Wife that I'm sponsoring is approved and become a permanent resident, How or what can I show to prove this, We or going to be living with my mother when we move?

Correspondence/documentation with your mom confirming the living arrangements. Anything that shows your intent to live in Canada like a lease, home purchase, job offer, etc.
