If you apply with just experience letter you will most likely be refused.
How can you lose a paystub from September 2019 if you were just hired on December 2019? That makes no sense.
Also, it doesn't matter if you work less than 30 hours on a given week. It is okay. The important thing is that you have to add the hours you have worked every single week BUT CANNOT count any time worked beyond 30 hours.
Hence, if at any given week you worked 40 hours, for example, you can only count 30 hours for that week. Conversely, if you worked less than 30, say 25 hours, you would count all 25 hours.
For instance, let's say your worked the following hours over a period of 8 weeks:
40+40+40+30+40+40+20+25 --> these are your real hours worked, which total to=275 hours.
However, as you can only count up to 30 hours per week, for IRCC purposes you would only add the following hours:
30+30+30+30+30+30+20+25=225 hours
These 225 hours are the ones you can use towards calculating your work experience. Once they add up to 1560 hours, regardless of how long it takes (in your case since you have been working part-time it will definitely take more than 1 year =52 weeks).
Now, do you meet the 1560 hours after adding hours this way?
Also, if you lost a paystub, you should be able to request a copy from your employer. If not, you have 2 options, explain this when you submit your application and hope they believe you. Or second, wait until you have worked more hours and have enough paystubs to support the hours of work you are claiming.

sorry i made a mistake in my first post, I got hired 25th of september 2019 not december.
I did the calculation and my total hours from september 25 2019 to september 2020 is 1549 but when i include the part time hours in october it will be over 1560.
