Option 1: You can ask her to send the passport to you (Canada) via UPS or Fedex. Then you can send both you and her passport to Ottawa and get the visa stamping. After you receive the passport, you can send it back to India for her. When your visa is ready, CIC will send you an email (PPR) and tell you where to send the passport. NO. DO NOT DO THAT. According to Indian Law it is considered illegal to send passport to another country if you hold Indian Passport. Better opt for option 2.
Option 2: If you choose not to send the passport to you. You can send an email to CPC-O and make arrangement to print the visa at another office (India).
I have been told that option 2 is very slow, it might take up to 1-2 months to hear back from CPC-O. I choose option 1 as my husband is also not residing in Canada now. It takes around 30-35 days for CPC-O to reply. But Do not opt for option 1.
