How strict for 'skilled worker' visa and what jobs?

I read about skilled trades and it says that to be eligible to apply you have to
Have at least 2 years of full-time work experience in an eligible skilled trade;
Have an offer of full-time employment for a total of at least one year; or
Have a certificate of qualification in your skilled trade issued by a province or territory; and
have had the job for at least 5 years

Is it really that strict?
And are there a way to find what skilled trades they are looking for? Found this but not sure how accurate it is

Also found this list that says you only need to have done one year of full time work..

Thinking of studying one year/semester of nutrition of some kind, so if I did that then got a same length work permit
through that would I qualify?

You would qualify to submit your profile for consideration - but you most likely won't have enough points to actually be selected for PR. Under this program, no one with fewer than 450 points has ever been selected. Based on the information you're provided, you would probably have well under 450 points.
