I am also a Canadian Citizen, and I am sponsoring my wife (Russian). We have completed and filed all the first-round paperwork, and we have seen some correspondence with IRCC (CIC). So I can speak from some experience. We married in Ontario, so that removed one of the barriers, by having a Canadian province issuing the Certificate of Marriage.
In terms of processing time, you are better to check IRCC's website for specific processing times. For you to be evaluated as a sponsor, it's approximately 90 days (86 I think was the last time I checked). And processing times for other countries vary greatly. If you are applying inland, and your SO has requested an open work permit as well, they will be granted that before 4 months. That's one thing we noticed, that the work permit was issued before they even began processing the PR.
In terms of the paperwork, it was a little daunting. It seemed like it never ended. I did get some advice from an immigration lawyer regarding applying inland, and things we would need. Other than that, it's largely a waiting game. Even if all the documents are submitted at the same time, you may still need to submit more. Just be prepared for them to ask for any extra information.
