So from what I understand we have 60 days to submit our application (after ITA). Once we submit the application, we will receive a specified checklist with all the documents that we need to upload. Is that right? How much time have we got then to upload documents?

60 days from the day you receive the ITA is the time during which you submit the entire application after uploading documents and paying the fees. There are multiple screens in the process which you complete one after the other and document upload is just one of those screens that you reach after completing the initial form.
