My wife landed in November 2016 and has condition 51 on her COPR. She is from a non-visa exempt country (Pakistan).

She is planning to visit her home country in September of this year and will stay there for about two months. Is my wife allowed to stay outside of Canada that long? What is the maximum amount of time she can stay outside of Canada without jeopardizing her PR?

To maintain her PR status, she has to be in Canada for 2 years for any 5 years period.

2 months is no issue.

I believe condition 51 was abolished

I see. So in order to maintain her PR, she cannot be out of Canada for more than 2 years, correct?

She has to be IN Canada for 2 years for any given period of 5 years.

This means she could technically be out for 3 years if she stays within Canada every single day for the following 2 years. (Assuming she has been in Canada without leaving since she got her PR)

I get it now. Thanks for clearing that up.
