Okay. My company will be able to provide reference letter without a doubt. Is there any particular thing I need to have in my reference letter considering my wiggly up and down hours.
Go into IRCC's and start reading. Do you homework.

They have all the information you need to apllyf to PR, it's just a matter of doing your part.

@NOC98 shared that with you already. Click on the link and read it.

The link I posted mentions all the required details that must be in your reference letter. Since you work variables hours, your reference letter should state the same.

This is just me, but I would put in some sort of appendix/table after your reference letter showing how you calculated your work hours to claim 1 year Canadian work experience, so it’d be easier for the IRCC analyst/officer to verify. Then your paystubs.
Thank you so much. I cannot appreciate your help enough here. Thanks again

I have had a good read to it and I have been in contact with some local agents too. All of them gave me different piece of information. Hence, I posted to be very sure of what I am supposed to do. Thankyou!

Yes, I am talking about what is in writing.

IRCC details what need to be in the reference letter. Bear in mind that these documents don't necessarily have a fixed formatting and the content might vary. However, what ever is a MUST is specified there.
