I'm landing in January with my pr and going back to the states to work for 6 months. When should I go to service Canada and apply for health care? Should I do it when I land in January or when I go there and start to actually live in June?
Is there a problem if I wait until June? Can I only apply when i land?

Don't get your provincial health insurance until you come here for good!

You don't apply for health care at Service Canada, that's where you get your SIN but steaky is right, no point in applying for health care until you move for good.

You will need a utility bill or bank statement mailed to your address of residence to be able to apply for provincial health insurance.
