So I wanted to know, in the meanwhile, what options my spouse has? Can the spouse travel to Canada before I do and start working there? What are the restrictions?

It's best for your spouse to travel with you or after you since the SOWP was issued based on your work permit. We've seen people sometimes run into issues / questions at the border when the dependent spouse arrives first. Others haven't had issues. So you can certainly try. However best would be to travel together.

Do we have any implication on the SOWP visa itself when the officer at the border questions the entry?
If spouse look for a Canadian Job from India and gets one, how do they start physically in Canada? Or the spouse find work only after I get to travel first? Sorry lot of ifs and buts questions!!

I was hoping that my spouse(with SOPW), right now in India, finds a Canadian job. she could be asked to join office in Canada but her travel is dependent on me(with ICT WP) travelling as well.
I am not sure what path generally a couple having ICT WP and SOPW takes.

We had this scenario. But the advice we got was to travel together. Basically the validity of SOWP depends on the validity of ICT work permit. Work permit is issued at the border only after officer verifies the documents given by your company and for the duration requested in the letter issued by your company. Only after the ICT permit is issued SOWP is issued. If I remember correctly there is a remark in WP that specifies, SOWP tagged to the same duration of ICT Work Permit
