Getting visa stamped in a different place and in a different passport

Hello.
So, I sortof have a unique case and I already emailed the visa office, but I just got a very generic answer.
I applied for my tourist visa couple of months ago planning to go visit a friend jn Canada in November. However, I got approved on December 17th. That usually wouldn't be an issue, but I'm leaving the States for the holiday break and I won't be back in time to send my passport during the 30 day window they gave me. On top of that, I have to get a new passport during the break (I'm not a US resident) because it expires in February. So, technically, I would have to get my visa stamped in a new passport and I still wouldn't make it back in time to the US to send it. So, my best bet would be to either get an extension on the 30 day period and get it stamped in a new passport; or get it stamped in a new passport somewhere in Europe.
Is there any way of making this work?
As I wrote above, the answer I got from the office was just that they invite me to send it asap and that they forwarded my data. So, now I'm not sure what that means and of course they answered from a "do not reply" email, so I can't pose any additional questions.
Anyone, please advise.

You can get it stamped in a new passport even in Europe.
