My picture is available in the official website of the company were i work.
( in the bottom of the homepage)

I want to say it in a LOE, is that ok ? or is it weird ?

could've specified your full issue from the start no? they won't give you a reference letter? if so no need for salaryslips in the first place

I was in a similar situation - couldn’t provide salary slips. Used a link from the employers website with some of my work and bio data published, as additional proof of employment.

I’m waiting for my copr now. It definitely doesn’t hurt. Just frame it professionally and make a strong case as to why you cannot furnish the documents that they would prefer. (Closed bank account/hr letter refusing letter of employment etc)
