Ahmed, this was already answered, where many members had mentioned that self declared letters will not be considered by CIC.
You can get letters from ex seniors on plain paper mentioning job duties, Salary, work hours and timings, joining and relieving dates, etc.

I understand this point, the question what if the previous manager left the company? will the letter be accepted?

Where are you working in SA? I too am here on a Work Permit in Johannesburg (working for Huawei Technologies at CellC) for the past 3 years. I showed proof of funds both in my Citibank account back in India (in INR) as well as in my FNB account here in South Africa (in ZAR). My immigration consultant showed both the accounts funds in one combined table after converting them Canadian dollars.

Yes you can brother... I had left it blank even the assets section as well... It is not significant for application. Just fund or liquid assets is more important.
