You might ask a colleague to testify to your duties, and include also a copy of your contract and payslips.

No big changes so far but keep an eye on the dates of the forms in the online "application pack" as they do change, IMM0008 was last changed March 2014 and there could yet be further changes to forms this month.

No, but it may help you get more points. If they don't like one of your jobs they might give you less points, so having some spare is good even if you reach the 67 without your wifes IELTS.

If 25 professions filled up completely, and nobody applied to the other 25, the programme would then be closed because there would be 25,000 applications. In reality some popular professions will completely close as they will reach the 1000 cap, but some will not and would only close if 25,000 is reached or when 2015 arrives.
If you look at FSWP2013, there was a 5,000 cap and it has not quite been reached yet:

but certainly the two most popular NOCs were full within a month.

If 2174 is anything to go by, very quickly, but in truth you'll only know in the first few weeks when you find out how many others are applying. The spreadsheet is very handy for predicting this.

No need to submit with the application, but it is recommended as it can speed things up. If it isn't ready in time then you can send PCCs to the VO when you get PER.
