If a letter is written on company letterhead, it implies that the communication is given with the approval of the company. Because that company no longer exists, in my mind this is giving a false impression. Also, the information given on the letterhead (phone number, e-mail address, etc) may be used by the local VO to verify the letter. If the company no longer exists, presumably any attempt to contact it will fail.
Instead I suggest a personal letter written by the CEO which explains your duties and also explains that the company no longer exists, so only a personal letter is possible. This should not negatively affect your application so long as the letter is genuine. You may want to supplement the letter with some other supporting evidence such as old business cards, salary slips, etc.
