If all your translation is done by one translator, to me, there should not be any problem to use only one affidavit. However, as your documents will be organised according to document checklist, so not necessarily, all your translated copy will go in same serial. So, better, make each translation independent so that the officer don't need to move back and forward checking with your affidevit.
