I totally understand your frustration mate , as i can see the same happening for me in a months time... more so coz i dont want to go through that EOI thing next year plus me and mrs have to go through IELTS again. Looks like there is no sure shot answer to this and it all comes down to LUCK!

Propably an affidavit might work.
But I think one way you can know if ur application will be rejected is if CC's are charged for applicants, who submitted two days after yours.
Because having seen the way my application is validated, they check if all the boxes are filled, all signatures are done, and they check the checklists. A red tickmark is put for every field in the application and the fields of the checklist. If anything is missing app is rejected. It's a fairly straightforward process, and should not take more time for a particular application.
