IMO, it is best to mention everything since any gap/discrepancy will raise unnecessary doubts. You dont want it to delay your processing.

About exp letter for ALL the previous employers - good to have. But if you cannot get ALL of them, give an explanation about it. You can probably initiate a request to ALL your ex employers. Finally, for the ones who do not respond, you can show that you at least attempted. Employers are not in obligation to cooperate and CHC understands this.

I have lodged a formal written application to my 2nd employer to issue me a Ref letter, I call them- they say its on the way, again I call them they say its now on someone's table and getting checked. And this has been going on for 2 months now. I am tired of it. How can I let CHC know if i eventually fail to obtain the Ref letter?

you truly said, who cares about our effort to have Canadian PR !!!

All you can do is show the CHC that you have made attempts. They will do the background check anyway.
