To study in Canada -
1. select a course and intake (as per your previous education and interest)- may be a college diploma or a Bachelor's in university... maybe this Jan or coming Sept. Keep in mind, most universities/colleges have Sept. intake..
2. Select the province and college/University you would like to study in.
3. Since you have been staying in UK, I don't think they will ask for an IELTS score. Just in case they ask for an IELTS score, citing the reason that your mother tongue is not English..but Polish... you should keep your IELTS score ready. Score atleast 6.5 overall, with 6 in each band.
4. Apply for the course, by paying required application fees for international students, and get the offer letter. 5. Then in most cases you will need to pay the full 1st sem fees or some amount of st sem fees known as tuition deposit to confirm the seat. By confirming the seat, you will get a Letter of Approval-LOA from the college/University. Things might be a slight different for students form UK, but this is how it works most of the time for students form India.
5. Next, you will need to show enough funds and prove that you can pay for tuition and support yourself(living expenses) for the entire duration of the course. In India, the Canadian High Commission prefers valid educational loans as safe way to judge, that the applicant is financially strong. It might be different in UK. You will need to check the Canadian embassy. Canadian High commission's website in UK.
6. Finally, after putting all documents together, completing the application form.. send your application package for Canadian study permit to the London CHC.
I don't think your Polish passport should be any problem, as long as you indicate that you are a bona fide student.
To know in detail, always refer the official CIC website/official Canadian high commission website in your country.Follow the instructions in detail to know thoroughly about studying in Canada.

by the way, I don't think..rules will be much different for Polish passport holders. Since you are residing in UK,You should consult an immigration lawyer/ recognized educational agent there, as to you should apply in Canadian embassy/High commission in UK or Poland.
