I am a Canadian Citizen by birth and she is American. If we want to do an outland application is it better to be married in the US or Canada prior to submitting the forms? Or does it matter?

You're best off getting married where your friends and family are and where you'll enjoy your wedding the most. They're looking for how genuine your relationship is, not attempts to seem "more Canadian" or something :p

So no, it doesn't matter where you get married, and congratulations :)

So if I fly to the US later this year, we get married, then her, her son and I travel back to Canada so they can spend time with me while her son is off school, then drive back to the US(when the visit is over). Would that affect our application for immigration in your view(s)?

If it's an outland application it won't affect it at all.

It would not affect your application for immigration, but the border officers might raise their eyebrows if your spouse and child are entering Canada before your sponsorship is approved. They might think your spouse and child could overstay their visit and live illegally. So, have ample proof of strong ties back to US. Employment letter (if your spouse is working), property documents, assets etc etc etc... to show that there are enough ties back to US.
